No-Bake Chocolate Peanut Butter Cookies {gluten, dairy, and egg-free}

Chocolate Version:
1 cup honey
1/2 cup cocoa
1/2 cup coconut oil
1/2 cup dairy-free milk (we use almond milk)
1 tsp vanilla
3/4 cup chunky peanut butter
3 1/2 cups gluten-free quick oats

Blonde Version:
as above, except omit cocoa and add 1/4 cup more peanut butter (total 1 cup peanut butter)

Super easy recipe!  Throw all ingredients into food processor until well mixed.  Spoon cookies onto wax paper, roll into bite size balls or press Into a cookie sheet and cut in bars.   Enjoy!
Ps.  add walnuts or pecans for a little bit of crunch too!
